We explored food consumption practices and indicators for food transitions among middle-class households in the South Indian megacity of Bengaluru. Through 38 qualitative interviews, we asked respondents about their perceptions of food safety and how they navigate food safety risks in their daily food practices. The COVID-19 pandemic brought the topic of food safety into sharp relief, and consumers were keen on maintaining good health through food consumption. We engaged social practice theory to understand food shopping practices, the rise in immune-boosting foods and the consumer demand for safe, healthy food as this relates to wider sustainable food transitions. We found that middle-class consumers mitigate food safety risks through careful selection of where food is purchased. A rise in immune-boosting foods, traditional herbs and spices part of the regional diet are being revitalized. Demand for organically grown foods is hampered by a lack of trust in verification systems. The paper presents the common sampling frame of the socio economic sub-projects. The investigations and data collections intertwine and complement one another. Thus the methodological approach reflects the idea of an interdisciplinary and integrative research approach. Lead by hypotheses we structured our sampling procedure hierarchically. Starting at the household level in the core villages of the research regions we investigate additional local villages. Further we extend the data collections on the regional level with household, village and trader surveys. The national and international levels we reach by stakeholder interviews with governmental and non-governmental experts. However, knowledge on the ecological and social outcomes of urbanization is largely fragmented across a multitude of local-level studies. We synthesized the outcomes of urbanization on 15 ecological and social variables associated with regional farming systems, namely water quality, agro-biodiversity, carbon sequestration, control of invasive species, soil fertility, control of soil erosion, pollination, cultural identity, food security, income and employment, demographic stability, conflict mitigation, social network, health and education, and equity. From 246 cases, positive, negative, and non-conclusive urbanization outcomes were extracted. Additionally, distributions of these outcomes by continent, population size of towns/cities, national per-capita GDP, and dominant farming systems were assessed. As a result, more negative than positive outcomes were found. Although ecological outcomes were largely negative, social ones were mostly positive. Threats to water quality, demographic stability, and cultural identity arose as particularly pressing issues. The ecological outcomes related to pollination were largely positive but all other ecological variables reported higher negative outcomes. The social outcomes related to the economic viability of farming and employment were largely positive, whereas those related to cultural and equity aspects were predominantly negative. The ecological outcomes were frequently negative in the Global South, medium-large cities, poor countries, and for livestock or fishery systems. The social outcomes were more frequently negative in the Americas, highly populated cities and megacities, wealthy countries, and for livestock and fishery systems. In Indonesia, large areas of forest were lost and extensive oil palm plantations were established over the last decades. We conducted a combined social and environmental study in a region of recent land-use change, the Jambi Province on Sumatra. The objective was to derive complementary lines of arguments to provide balanced insights into environmental perceptions and eco-hydrological processes accompanying land-use change. Interviews with villagers highlighted concerns regarding decreasing water levels in wells during dry periods and increasing fluctuations in stream flow between rainy and dry periods. Periodic water scarcity was found to severely impact livelihoods, which increased social polarization. Sap flux measurements on forest trees and oil palms indicate that oil palm plantations use as much water as forests for transpiration. Eddy covariance analyses of evapotranspiration over oil palm point to substantial additional sources of evaporation in oil palm plantations such as the soil and epiphytes. Stream base flow from a catchment dominated by oil palms was lower than from a catchment dominated by rubber plantations; both showed high peaks after rainfall. An estimate of erosion indicated approximately 30 cm of topsoil loss after forest conversion to both oil palm and rubber plantations. Analyses of climatic variables over the last 20 years and of a standardized precipitation evapotranspiration index for the last century suggested that droughts are recurrent in the area, but have not increased in frequency or intensity. Consequently, we assume that conversions of rain forest ecosystems to oil palm plantations lead to a redistribution of precipitated water by runoff, which leads to the reported periodic water scarcity. The island of Sumatra in particular is severely a ff ected by the rapid expansion of monoculture cash crops. Since Dutch colonial times, land tenure regulations here have generally favored such resource exploitation. The current National Development Plan continues to see Sumatra as a center of resource production in order to eradicate poverty and accelerate national development. This developmental focus, however, is accompanied by contested land use scenarios. Taking a historical perspective, this research discloses di ff erent layers of past and present land tenure regulations to understand present contestations of land use, resource exploitation, and their social consequences. Based on a village case study, the research demonstrates how di ff erent political eras and their accompanying land tenure approaches are inscribed in today's local landscape. We found that de jure regulations which were added to customary laws created a situation of legal pluralism. Set against the background of the conflict arena of Bungku village, Jambi province, this paper describes and analyzes the struggle for land between a group of indigenous people, the Batin Sembilan, and an oil palm company, PT Asiatic Persada. Yet, organic shops are only attracting middle-class consumers. We observed and interviewed 104 customers in five organic shops in Bengaluru to find out why this is the case. In this article, we follow practice theory to discuss the reported consumption patterns. We show that consumers, influenced by commercials and the advice of medical and nutritional professionals, legitimize their consumption of organic foods as an investment in their future health. We show that the customers of organic shops legitimize their consumption practice with affective engagements; thereby, performing symbolic boundaries that distinguish them from other social classes. This distinction manifests itself in the consumption of millets, which contributes to the change of the meaning of this food from a life-sustaining staple to a lifestyle superfood.
